Chocolate Muffins

Ingredients

  • ¾ cup milk
  • 1tbsp vinegar
  • ¾ cup vegetable oil
  • 2 eggs
  • 1 tsp vanilla essence
  • 1 tsp instant coffee
  • ⅓ cup hot water
  • ¾ cup white sugar
  • ¾ cup brown sugar
  • 1½ cup flour
  • 1 tbsp baking powder
  • ¾ cup cocoa powder
  • 1tsp salt
  • 1½ cup chocolate chip
  • 100g white chocolate chunks ( Lindt)

Directions

  1. Preheat oven to 170C/340F fan assisted.
  2. Mix milk and vinegar in large bowl and leave for 5 min.
  3. Add vegetable oil, eggs and vanilla essence.
  4. Stir instant coffee into hot water and add to mixture.
  5. Add the sugar and stir.
  6. Sieve in the flour, BP, cocoa and salt and stir with wooden spoon.
  7. Add chocolate chip.
  8. Put ⅓ cup batter in each muffin case , sprinkle white chocolate chunks on top & bake for 20-25 minutes.

Notes

  • instead of milk and vinegar you can use buttermilk
