Chocolate Muffins

Ingredients
- ¾ cup milk
- 1tbsp vinegar
- ¾ cup vegetable oil
- 2 eggs
- 1 tsp vanilla essence
- 1 tsp instant coffee
- ⅓ cup hot water
- ¾ cup white sugar
- ¾ cup brown sugar
- 1½ cup flour
- 1 tbsp baking powder
- ¾ cup cocoa powder
- 1tsp salt
- 1½ cup chocolate chip
- 100g white chocolate chunks ( Lindt)
Directions
- Preheat oven to 170C/340F fan assisted.
- Mix milk and vinegar in large bowl and leave for 5 min.
- Add vegetable oil, eggs and vanilla essence.
- Stir instant coffee into hot water and add to mixture.
- Add the sugar and stir.
- Sieve in the flour, BP, cocoa and salt and stir with wooden spoon.
- Add chocolate chip.
- Put ⅓ cup batter in each muffin case , sprinkle white chocolate chunks on top & bake for 20-25 minutes.
Notes
- instead of milk and vinegar you can use buttermilk
